At a kitchen store you can get a brown sugar saver.
It's a little teracotta disk that you soak in water for about 15 minutes, dry off, and put in an airtight container with the brown sugar. That will keep the sugar moist and soft.
I've also heard of people putting a damp (not dripping) paper towel on top of their brown sugar (again, store in an airtight container) to do the same thing.
If you need to recover hard brown sugar, either do the trick above with the paper towel and let it sit for a while, or if you are in a hurry, try putting a couple of wet paper towels on top of the sugar in an open bowl and microwave for about 30 seconds, check by gently stabbing with a fork and see if it is looser, then do another 30 seconds or so if needed. Don't want to get it too hot because it will melt.

Brown Sugar gets hard because it absorbs moisture and clumps similar to the way that clumping kitty litter will clump. The best way to keep brown sugar from getting hard is to keep it in an air-tight container [for example: a ziplock bag, or a tupperware container]. Some people will put grains of uncooked rice in a little bag inside the container with the sugar. The rice will absorb any moisture that happens to get into the sugar while the lid is off or the ziplock bag is open. |

Brown sugar can also be stored in the freezer and thawed a few hours before using.
If you are in a real hurry, you can also put it in your food processor or blender, this will break it up as well. |

I place my open container (bag) of brown sugar in a ziplock back and store it in my pantry in a dark spot keeping it out of the light as I do honey to keep it from crystalizing. Works for me. |
