Any good salmon recipes? I'm looking for something healthy and yummy!
Answer #2
Thank you, I will try it tonight!
Answer #3
I prefer the wonderful flavor of a fresh Salmon.
I squeeze 1/2 lemon on the inside flesh, sprinkle some capers inside, wrap in foil.
Bake in 350* oven until juices run clear (not milky).
Moist and tender, flakes with a fork.
Salmon supplies enough fat (skin on) I like butter but do not prefer oily salmon.
Plenty of various recipes at the foodnetwork.com

For snacking I like to take leftover salmon and put it into a cheese ball. Mix it with 8 oz of cream cheese, chopped onion, a bit of smoked salt and some Worcestershire sauce, make it into a ball or log and roll it in parsley, or nuts. You can use canned salmon, or tuna too. Grab some crackers Yumm!

Ironically enough, I just made this for the first time last night and the whole family liked it and it was really easy!
Nutty Salmon
1/2 cup slivered almonds
1/4 cup butter, cubed
1/4 cup lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 pounds salmon fillets
-Place almonds in a small microwave-safe bowl. Add butter. Cover and microwave on high for 3-4 minutes or until almonds are browned, stirring twice. Add lemon juice, salt and pepper.
-Place salmon in an 8" square microwave-safe dish (altho I used an oval dish and it worked fine). Top with almond mixture. Cover and microwave on high 5-7 minutes or until fish flakes easily. Let stand for 5 minutes before serving.
I got this recipe from Taste of Home's 'Simple & Delicious' magazine. Enjoy!
